Some may think “sweet potato at breakfast? What?!” But hear me out! This sweet potato breakfast bowl is fast to make and it’s FIRE good and healthy. You can also make enough to save for the next few mornings because it stores well in the fridge as leftovers!
I have always loved sweet potatoes, but I HATED chopping them. Thanks to Courtney Toliver (if you don’t follow her on Instagram, you should, one of my FAVS,) I was introduced to these pre-chopped frozen steamable bags of sweet potatoes!
As a breastfeeding mama, I still need good carbs and fat in my daily diet. This is one of the easiest ways to incorporate both of those, yet still be healthy and DELICIOUS. The sweet potatoes add a perfect sweetness to the smoky savory flavor of the sausage. Another great thing about this recipe is that it is easy to swap things out for other ingredients you like better! For example, do you like ground breakfast sausage better than smoked sausage? Swap it out! I’ve made this recipe multiple times with different ingredients I have on hand. Bacon, ground sausage, even turkey. I will say this smoked sausage is my favorite combo!
Ingredients needed to make this sweet potato breakfast bowl:
- 1 bag of pre-chopped frozen sweet potatoes ( I use Great Value frozen bag)
- 5 eggs
- 1 package of smoked sausage
- 1 Roma tomato
- cilantro
- Sriracha (optional to add heat)
Directions to make your breakfast bowl:
- Place your bag of frozen sweet potatoes in the microwave for around 4 minutes (as directed on instructions).
- Scramble 5 eggs in a pan on the stove (I add a dash of milk, salt, and pepper to mine).
- Slice smoked sausage as you prefer and fry both sides in a pan on the stove, no grease necessary.
- Chop cilantro and tomato for your toppings.
- Layer ingredients in a bowl to serve as follows: sweet potatoes, scrambled eggs, sausage, tomato, and cilantro. Top with Sriracha for a perfect kick of spice.
