Have you ever felt so desperate to get veggies into your kiddos you want to stuff them down their throat? Sorry if that sounded aggressive. But yeah, I’m there. I was so so pleased that when I made this breakfast casserole, they ate it UP and didn’t even know it was chock full of some good veggies they need! Here’s a recipe that includes veggies, delicious layers of tortillas, and of course fluffy cheesy eggs.
Ingredients Needed to Make an Overnight Breakfast Casserole:
Good thing, you probably already have these ingredients in your fridge!
- 3 tortillas (or a can of crescent rolls)
- Shredded cheese
- breakfast sausage
- bell peppers
- spinach
- crumbled bacon
- 6 eggs
- 1 tsp of salt
- 1.5 cups of heavy cream
- 1 tbsp of flour
The beauty of this casserole is that you can play with the toppings ingredients to change it up too! Broccoli, zucchini, onions, squash, kale, deli turkey meat, whatever you have on hand. If veggies are chopped up finely enough, more than likely they won’t even know they are in it!
How to Make an Overnight Breakfast Casserole:
- Cook toppings. Chop the veggies up finely as possible. Add some butter or spray a pan with some oil to sautee those veggies. Then set aside. Cook your bacon, and breakfast sausage.
- Mix your eggs in a seperate bowl with the cream, flour and salt.
- Layer in baking dish: tortilla, cheese, toppings, repeat until to top of pan. Pour egg all over top, add cheese, and a few toppings over top.
- You can either store in fridge until ready to bake, or bake immediately at 350 for 35 minutes covered. Uncover and bake for an additional 5-10 minutes. Enjoy!
