This jalapeno-fried chicken is EASILY the best fried chicken there is. Perfectly seasoned chicken strips with a kick of spice from the crunchy fried jalapenos. For a crowd-pleasing chicken tender recipe, you can never go wrong with jalapeno chicken. With the perfect ratio of crispy to spicy, these tenders marinated in jalapeno juice will have everyone running back for seconds…and thirds!

If there is one meal that Hunter would like to eat every single night…it’d be Jalapeno Fried Chicken. Though I do try to eat a bit healthier throughout the day, this recipe is still a favorite to make for dinner. The kids love it too-yes, even Jackaroo! You would think the jalapeno chicken would be too spicy for them but it’s actually not. The batter for the chicken is perfectly seasoned, and the jalapenos themselves are what adds a kick, so I leave those off the kids’ plates – haha! The chicken is SO tender from the marinade. This is what truly sets this recipe apart from other fried chicken.

Items you may need for cooking this recipe:

- Two chicken breasts
- Jar of jalapenos in juice
- 1/3 cup of milk
- 3 eggs
- 1 1/2 cup of flour
- Oil enough to fill 1/2 inch of the bottom of the pan
- 1 Tbsp of Garlic Salt
- 1 Tbsp of Tony’s Creole seasoning
- 1 tsp of salt
- 1 tsp of pepper

Directions for Jalapeno Fried Chicken:
- Cut chicken breasts in half horizontally. Then slice into chicken strips (thin-ish to ensure cooking thoroughly).
- Place them in a bowl as seen above, and cover completely with jalapeno juice and as many jalapenos as you think your family will eat.
- Add milk to this bowl as well.
- Marinate for at least one hour before cooking, but ideally all day in the fridge.
- Take two separate bowls and in one, line with saran wrap (for easy clean up) and add flour and all seasonings. In the second bowl, add 3 eggs, and whip until thoroughly mixed.
- When ready to begin cooking, heat oil in a skillet over med-high heat (or number 7ish).
- Start dipping chicken pieces. First in eggs, then in flour mixture, DOUBLE DIP the same piece in egg again, and then in flour again. This is the trick to YUMMY chicken strips.
- Dangle a piece of chicken over oil to ensure it’s hot enough. Flour pieces that fall will sizzle in oil when it is.
- Add chicken to oil, and immediately continue to add pieces of chicken from that same routine to oil.
- Chicken is ready to flip when breading is golden brown on the first side. This will take about 1 full minute if the oil is hot enough. (Diff stoves have diff heat strengths, but don’t cook too long as the chicken will cook fast if your chicken is cut thin enough).
- Remove all chicken from oil onto paper towels to soak up any excess oil.
- Take jalapenos from the marinating bowl, toss in flour mixture, add to oil. Flip after about 20 seconds. These cook very fast.

Voila. Jalapeno-fried chicken that will for sure be asked to be made again.
