Here I share with you an easy fast healthy lunch option! I am so indebted to my sister-in-law Tiffany for this amazing grilled chicken lunch wrap recipe. She put two random recipes together and it was a match made in heaven. A marinating recipe for the grilled chicken, and the jalapeno dressing recipe from Rachel Parcell. The combination of the two recipes was a fresh-tasting DELICIOUS healthy lunch wrap. Best grilled chicken lunch wrap ever! When I posted this on my stories, you guys went crazy for it, so here it is somewhere more permanent.
Start with making the Jalapeno dressing:
- 1/2 of 1 jalapeno
- 1/2 cup of plain Greek yogurt
- 1/3 cup of olive oil
- 1 cup of fresh cilantro
- 1 tsp of salt
- 1 Tbsp of honey
- juice of 1-2 limes
- 1/2 tsp minced garlic
Mix each of these ingredients in a bowl together, and place in the fridge to chill.
Directions for the chicken marinade:
Ingredients for Chicken Marinade:
- 1/4 cup fresh lime juice
- 2 tbsp of olive oil
- 2 tbsp of chopped cilantro
- 2 tsp of squeezed garlic
- 1 tsp of salt
- 1 tsp of brown sugar
- 1/2 tsp of ground cumin
Mix all ingredients together in a bowl and add your raw chicken. Massage the marinade into each piece of chicken until thoroughly covered. Place in fridge until ready to grill.
