I still haven’t found a better strawberry cake. The glaze-type icing truly makes it!
Ingredients:
- 1 White Cake mix
- 3 Tbsp of flour
- 1 small box of strawberry jello
- 3/4 cup of vegetable oil
- 3/4 cup of water
- 1/2 cup of crushed strawberries with juice
- 3 large eggs (room temp)
- 1 tsp of vanilla extract
GLAZE:
- 2 Tbsp of melted butter
- 2 Tbsp of crushed strawberry juice
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract (I didn’t have this so I didn’t use)
- 1.5 cups of powdered sugar
Directions:
- Heat oven to 350.
- In a mixer, mix cake mix, flour, and jello.
- With the mixer on low, pour in oil, water, and strawberries with juice.
- Then add one egg at a time.
- Add the vanilla. Increase the speed to medium-high and beat for about 2 minutes to put air in the batter.
- Pour into a prepared pan (bundt or cake pan) and bake for 37-40 minutes.
- For the glaze, whisk together and spread over top of the cake.
I don’t know if ya’ll have ever heard of a Magic Bullet, but I love using it for small things like this. The perfect way to quickly crush the strawberries up and get a perfect juice.
The glaze will be super thick, icing like, but don’t worry, it’ll melt perfectly on the cake as soon as it is spread.
