This fast recipe will become one you’ll want to repeat! Quiche is easy to store in the fridge for those rushed mornings that need something quick but hearty. The grits give it a delicious crispy crust, and the filling can be anything you have on hand!
My mother goes to this adorable bakery around the corner from her house for two things. Their cranberry bread and their breakfast quiche with grits crust. When she came to stay with me after having her knee surgery, I was trying to make things I knew she would love. I had NEVER made a quiche before, but I went to work testing out different ingredients and techniques to find this perfect quiche recipe. The result of my second try was the winner. She said it was better than theirs…just sayin’. Hunter still wouldn’t touch it with a ten foot pole, but Julia and Jack ate it UP.

Tips to make a great quiche:
In this paragraph, I give some tips on how to make a great quiche.
First, whether it is a flour crust, or a grits crust, having the oven piping hot is a main key to a great quiche.
Secondly, add all the toppings (ingredients) you’d like! This is a great time to look at the contents of your fridge that may need to be used up. Veggies such as spinach, zucchini, carrots, and even broccoli are great additions. This is an easy way to sneak nutrients into your family’s diet without them realizing it.
Thirdly, don’t over bake it! You want those eggs barely done when you take it out. Fluffy and moist. Otherwise the eggs will get spongey. And no one wants spongey eggs.
Ingredients:
- 1/2 cup of Grits (doesn’t matter what kind)
- 1 2/3 cups of water for grits
- 2 Tbsp of butter
- 1/2 cup of shredded cheese (any kind)
- 5 eggs
- 1 cup of milk or heavy cream
- 2 oz of cream cheese
- 1/2 onion sauteed in butter
- 2 tsp of garlic
- ham
- bacon
- 1/2 cup of shredded mozzarella cheese
- 1/2 cup of shredded colby jack cheese
- salt and pepper to taste
Directions for Breakfast Quiche
- Heat oven to 350.
- In a pot on stove, bring 1 2/3 cups of water to a boil.
- Add 1/2 cup of grits, salt, and 1 tbsp. of butter.
- Let cook for about 5 minutes until grits are done.
- Add 1/2 cup of shredded cheese to grits.
- Spread those grits in a buttered pie dish, press up a bit from the bottom all around.
- Melt 1 Tbsp. of butter and drizzle that over top of grits in pie dish.
- Put in oven at 350 for 7-8 minutes.
- In pan on stove, sauté 1/2 diced onion, and add in 2 tsp of garlic.
- Mix 5 eggs, 1 cup of milk or heavy cream, 2 oz. of cream cheese, sautéed onion and garlic, ham, bacon, cheese, salt and pepper.
- Pour into pie dish on top of grits crust.
- Sprinkle some cheese over the top.
- Bake at 350 for 35 minutes.
- Serve that goodness up with a smile and a strong cup of coffee.
